Poco-spresso

Poco-spresso is named for the Brasil beans that go into it from the Poco Fundo cooperative. When I was developing this blend, I was intending to do a 3 or 4 bean blend, but the combination of Poco Fundo and the very clean Organic Sumatra that I added to it was so compelling that I had to stop at two beans. Sometimes, less is more, and leaving these two outstanding coffees to show through results in a mild espresso that has big body and crema with some interesting fruity notes.
